1885: Marie-Louise Maury inherits the "Café des allées" run by her parents in Romans, and gradually introduces ravioles to her customers.
1928: Marie-Louise Maury retires to her home, but continues to make ravioles, helped by her grandson Maurice Donnadieu.
1956: Maurice Donnadieu opens a small store adjoining the Foyer du Théâtre, called "La Mère Maury", and resumes making raviole by hand.
2020 : « La cité de la raviole » ouvre ses portes.
